Recordist's notes
On my visit to the Moucha Brewery I was very kindly given a small tour by Jan the head brewer there. Brewing was his life. He was previously employed by the old brewery when the full scale industry operated in Braník years ago. Today’s craft brewery is smaller in scale and a relatively quiet process. He allowed me to record a couple of the events which made sound. This one is adding hot water to the vats where the grain is fermenting. It must last for precisely two minutes.
